Today I accomplished a goal I have had for a while now. That sounds serious, but in truth today I made Red Velvet Cupcakes with Cream Cheese Icing! Well, what a thing hey. Beside my red stained fingers and dishcloths, they turned out so well 🙂 *happy dance.
So as I sit here sipping on tea and eating cupcakes, let me share the recipe with you so you too can have fun baking Red Velvet Cupcakes with Cream Cheese Icing for your next function. I got this recipe from Paula Deene off the Food Network, but I altered it slightly as I went along baking. So here is what I came out with.
The Ingredients you will need are…
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food colouring
1 teaspoon white spirit vinegar
1 teaspoon vanilla essence
For the Cream Cheese Frosting you will need…
1 tub cream cheese, softened
1 cup butter, softened
1 teaspoon vanilla essence
2 cups sifted icing’ sugar
So what to do once you have all the ingredients…

Preheat the oven to 180 degrees.
Grease your muffin tins. The recipe makes 24 cupcakes and I suggest using a size smaller tin than a muffin tin.
In a mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
In a large bowl gently beat together the oil, buttermilk, eggs, food colouring, vinegar, and vanilla with a handheld electric mixer.
*DID YOU KNOW: the original recipe for red velvet cupcakes uses beetroot juice extract, not red food colouring.
Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Divide the batter evenly among the cupcake tins about 2/3 filled.
Bake in oven for about 20 mins.
Remove from oven and cool completely before frosting.
For the Cream Cheese Icing…
In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Mix until smooth and silky. Ice the cupcakes as you wish and decorate with edible glitter, red and white sprinkles or whatever makes you smile.
I had such fun making these today and definitely plan to make them more often now.
