Yesterday was my mum’s birthday and so I thought it would be the perfect occasion to make a White Chocolate Tart.
Much like the Chocolate Tart I made for World Baking Day, this tart is so easy and you really can have a lot of fun with what topping you use. Seeing as our local stores are packed with fresh strawberries I decided to use some of these on the tart.
Anyways, enough from me… here is the recipe for you.
For the base:
Blitz up half a packet of tennis biscuits.
Pour in 2 tbsp of melted butter to hold the crumbs together.
Pour base mixture into a pie dish or tin, and push down to make a base of your desired thickness.
Place under the grill until base starts to turn light brown.
Remove from oven and cool.
For the filling:
Melt 2 slabs of white chocolate
Mix in 250g of Mascarpone Cheese
Pour into your cooled pie dish.
Place in the freezer for 20 minutes.
Leave in the fridge until ready to serve.
Add whatever topping you like before serving.
Some ideas could be:
Fresh strawberries, raspberries, blueberries
Nuts
Shaved chocolate
Even just a dusting of icing sugar
